ZESTY SWEET POTATO GRATIN WITH CRANBERRY CRISP PRINT RECIPE

INGREDIENTS:

3 sweet potatoes, peeled and very thinly sliced (about 8 cups)
2 tablespoons lime zest
2 tablespoons cornstarch
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
2 cups heavy cream
1/4 cup Ocean Spray® White Cranberry Juice Drink
1 1/2 cups Ocean Spray® Sweetened Dried Cranberries, chopped
2 ounces butter, melted
2 tablespoons all-purpose flour
2 tablespoons instant oats
1 tablespoon chopped fresh parsley

DIRECTIONS:

Preheat oven to 350ºF.

Combine potatoes, lime zest, cornstarch, salt and lemon-pepper seasoning in large bowl. Spread potato mixture evenly in 9-inch square baking pan. Whisk together cream and white cranberry juice in medium bowl. Pour over potato mixture. Bake for 20 minutes.

Mix dried cranberries, butter, flour, oats and parsley in small bowl. Sprinkle over potato mixture. Bake for 20 minutes or until topping is golden brown and potatoes are tender.

Makes 12 servings.
