TRAIL MIX TORTONI PRINT RECIPE

INGREDIENTS:

1/2 cup Ocean Spray® Craisins® Trail Mix - Cranberry, Fruit and Nut, finely chopped
6 tablespoons melted butter
1/2 cup Ocean Spray® Cranberry Juice Cocktail
1/2 cup Ocean Spray® Pineapple Juice
1 cup water
4 ounces sugar
6 egg yolks
2 tablespoons vanilla
7 ounces whipping cream
1/2 cup Ocean Spray® Sweetened Dried Cranberries
12 sprigs fresh mint

DIRECTIONS:

Grind trail mix in bowl. Stir in butter until well mixed. Press mixture onto bottom and up side of ramekin mold. Place in refrigerator.

Pour cranberry juice cocktail and pineapple juice into separate saucepans. Bring to a boil. Boil until reduced and syrupy. Drizzle each juice in circular designs on serving plate. Place plate in refrigerator.

Combine water, sugar, egg yolks and vanilla in medium saucepan. Heat over medium-high heat, stirring constantly, until mixture sticks to spoon. Remove from heat. Whip until stiff and frothy. Mix in cream. Transfer mixture to chilled crust. Place ramekin in bowl filled with salt and ice. Keep on ice for 3 hours.

When ready to serve, loosen tortoni from ramekin with knife. Transfer to chilled plate. Garnish each serving with dried cranberries and mint.

Makes 12 servings.
