PEAR AND GORGONZOLA SALAD WITH CRANBERRY VINAIGRETTE PRINT RECIPE

INGREDIENTS:

1 cup Ocean Spray® Craisins® Dried Cranberries
2 cups extra light olive oil
1/2 cup white wine vinegar
3/4 teaspoon white pepper
1/2 teaspoon salt
24 cups mixed salad greens
12 firm, ripe Bosc pears, peeled and sliced into twelfths*
3 cups crumbled Gorgonzola cheese
3 cups coarsely chopped toasted walnuts

DIRECTIONS:

1. Combine dried cranberries, oil, vinegar and seasonings in a large food processor. Process until dried cranberries are finely chopped. Adjust seasonings; set aside.

2. Prepare each salad plate by lining with 1 cup greens and topping with 6 pear slices, 1 tablespoon cheese and 1 tablespoon walnuts.

3. Stir dressing well. Spoon over salad just before serving.

YIELD: 24 servings; 3 cups vinaigrette


*Soak briefly in lemon water to prevent browning, if desired.
