FETTUCCINE WITH CRANBERRY MACADAMIA NUT PESTO PRINT RECIPE

INGREDIENTS:

12 cups fresh basil leaves
12 garlic cloves
4 1/2 cups macadamia nuts
3 cups olive oil
1 1/2 cups grated Parmesan cheese
2 teaspoons salt
1/2 teaspoon white pepper
3 2/3 cups Ocean Spray® Craisins® Dried Cranberries
6 pounds fettuccine, cooked al dente

DIRECTIONS:

1. Combine basil, garlic and nuts in a large food processor. Process until almost smooth.

2. Drizzle in olive oil through feed tube while motor is running.

3. Add cheese, salt and pepper; process to combine. Transfer to a medium mixing bowl. Stir in dried cranberries. Adjust seasonings to taste.

4. Serve 1 3/4 cups fettuccine tossed with about 1/2 cup pesto.

YIELD: 24 servings
