INGREDIENTS:
5 pounds shredded red cabbage, about 28 cups 2 red onions, sliced 1 bunch green onions, sliced 3 cups olive oil 1/2 cup red wine vinegar 1/2 cup sugar 2 teaspoons pepper 2 teaspoons ground cumin 1 teaspoon dry mustard 3 cups Ocean Spray® Craisins® Dried Cranberries
DIRECTIONS:
1. Combine cabbage and red and green onions in a large mixing bowl.
2. Blend oil, vinegar, sugar, pepper, cumin and mustard in a separate bowl. Add to cabbage mixture; toss to coat well.
3. Stir in dried cranberries.
4. Cover and refrigerate 1 hour. Can be made up to 6 hours ahead.
YIELD: 14 cups or 28 1/2-cup servings.
