CRANBERRY ORANGE SCONES PRINT RECIPE

INGREDIENTS:

5 1/4 pounds flour
4 ounces sugar
2 ounces baking powder
2 ounces salt
1 pound butter or margarine
2 1/8 pounds heavy cream
8 eggs
2 1/2 pounds Ocean Spray® Sweetened Dried Cranberries
5 tablespoons orange zest
Sugar

DIRECTIONS:

1. Combine dry ingredients using a mixer on low speed.
2. Finely work butter into the dry ingredients, using the whisk attachment.

3. Add cream, eggs, dried cranberries and orange zest, mixing with the paddle attachment just until dry ingredients are moist.

4. Roll out dough on a floured surface to 3/4-inch thick. Cut scones using a 3-inch round cutter. Place on ungreased sheet pans. Re-roll and cut scrap dough. Sprinkle with sugar.

5. Bake at 425° in a standard oven for 12 minutes or until golden brown. Makes about 4 dozen scones.
