INGREDIENTS:
2 1/2 pounds ground sausage meat 1 2/3 cups chopped green pepper 1 2/3 cups chopped onion 3 pounds 2 ounces Ocean Spray® Whole Berry Cranberry Sauce 1 1/4 cups shredded Monterey Jack cheese 18 6-inch flour tortillas
DIRECTIONS:
1. Lightly brown sausage meat in a large skillet over medium heat. Drain thoroughly. Return meat to skillet.
2. Add green pepper and onion. Cook until almost tender, stirring frequently.
3. Add cranberry sauce, cooking until thoroughly heated.
4. Sprinkle cheese on meat mixture. Continue cooking until cheese melts.
5. Using a slotted spoon, place 4 ounces of meat filling evenly down the center of each tortilla. Fold each end over the other.
YIELD: 18 servings
